Naturally the favorite, with tropical fruit notes as "Ripe pineapple" and sparking strawberry.
This method is a washed coffee, leaving the coffee in water tanks for several days and replacing the water periodically, yielding citric notes with caramel.
We recently started experimenting with this method. You will find heavy fruit notes and sweet bubblegum.
3 Steps Separation (Quality Assurance)
Well paid pickers pick the rippest cherries by hand.
The cherries will then be classified by density in a water canal.
The final separation step takes place before export where a gravity separator shakes the coffee and assures only the heaviest, most dense beans make it to the bag.
